Turn the oven on to 200 degrees Fahrenheit to keep the boxty warm while cooking the rest of the meal.
Dice the potatoes and place them in a pan, covering them with pink Himalayan salt and water.
Boil the potatoes for about 8 to 10 minutes until soft but not mushy.
Mash the boiled potatoes to a medium consistency and add the frozen hash browns, half and half, and one egg (or vegan substitute).
Season the mixture with salt and pepper to taste, then add the flour and mix until you achieve a batter consistency.
Heat a skillet and spray with cooking spray, then spoon out 2 to 3 tablespoons of the potato mixture for each cake.
Cook the potato cakes for about 4 to 5 minutes on each side until they bubble and are golden brown.
Plate the boxty cakes and keep them warm in the oven if desired.
Drain the tofu and press it between paper towels with a weight on top until ready to use.
In a saucepan, bring 2 cups of water to a boil, then add 1/2 cup of grits and salt the water.
Cook the grits for 10 to 15 minutes, stirring occasionally, until they reach the desired consistency.
Cook the MorningStar vegetarian sausage in a skillet with cooking spray until crispy, about 8 to 9 minutes.
Crumble the drained tofu into another skillet and cook until it resembles scrambled eggs, about 5 minutes.
Add the diced red bell pepper and onion to the tofu and cook for an additional 5 minutes, seasoning with turmeric, salt, and pepper to taste.
Add the veggie bacon to the skillet and cook until heated through, noting that the creator did not enjoy the taste of the veggie bacon.
