Cook the chopped onion with a little oil and the chorizo (without skin) together in a pan.

In a separate bowl, combine 1/2 kg of quick-cook polenta with 1/2 liter of water to hydrate it.

Add 9 eggs to the hydrated polenta and mix well.

Add the cooked onion and chorizo mixture to the polenta and mix thoroughly.

Season the mixture with salt, pepper, and approximately 1 tablespoon of oregano.

Add 150 grams of creamy cheese, chopped, to the mixture and integrate it well.

Transfer the mixture to a baking dish.

Bake in the oven at 200 degrees Celsius for 30 to 40 minutes until cooked and golden.
