Melt 200 g of butter in a stainless steel pan over low heat until fully melted.
Add 250 g of flour to the melted butter and stir continuously until it thickens and changes color.
Prepare the sherbet by combining 400 mL of water and 400 g of sugar in a separate pot; heat until sugar melts but do not let it boil.
Cover the sherbet and turn off the stove; add milk gradually to the mixture.
Continue to cook the flour mixture until it caramelizes and develops a nutty aroma.
Once the flour mixture is ready, slowly add the sherbet to it, stirring to avoid lumps.
Cover the mixture with a cloth and let it rest for about 20 minutes to soak up moisture.
Shape the halva using spoons or an ice cream scoop, or serve it with ice cream.
