1/4 tsp salt
1/4 tsp pepper powder
1/2 US cup maida/all purpose flour
1/2 US cup corn flour
1 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/2 tsp sugar
1/4 tsp onion powder
1/4 tsp garlic powder
150 ml cold club soda
oil for deep frying
potato fries
tartar sauce
5-6 tbsp mayonnaise
1 tsp fresh dill or fresh parsley, fine chopped
2-3 tsp dill pickle, fine chopped
pinch of pepper powder
1/2 tsp lemon juice

Cut the fish fillets into 3-4 long pieces and pat dry.

Season with 1/4 tsp salt and 1/4 tsp pepper powder. Mix and set aside for 20 mins.

For the batter, take a bowl and add the dry ingredients: maida, corn flour, baking powder, baking soda, salt, sugar, onion powder, and garlic powder. Mix well.

Slowly add the cold club soda to the dry mixture and mix well to make a thick batter.

Heat oil for deep frying.

Take the marinated fish pieces one at a time, dip in the batter, and coat well on both sides.

Drop gently into the hot oil, ensuring not to crowd the pan. Flip the pieces after a minute and continue frying for another 5-6 minutes until golden brown, turning occasionally for even cooking.

Remove the fried fish and repeat for the remaining pieces.

Serve hot with potato fries and tartar sauce.
