2 tablespoons butter
2 cups oil

Cut the Cod fillet into about four or five nice sized pieces.

In a small mixing bowl, add a few spoonfuls of Duke's Mayo.

Season the Mayo with garlic paste, Old Bay Seasoning, and the juice of half a lemon, making sure no seeds get in.

Chop up some flat leaf Italian parsley and add it to the mixing bowl, then mix and taste to adjust seasoning.

Spread plain Panko bread crumbs over a medium sized tray.
