In a large bowl, add 240 g of all-purpose flour and 20 g of powdered sugar.
Add 90 g of ground walnuts, 35 g of cocoa powder, 1 and 1/2 teaspoons of cinnamon, 1/4 teaspoon of cloves, and the zest of one lemon. Whisk together.
Work in 190 g of salted chilled butter until a cohesive smooth dough forms.
Wrap the dough in plastic wrap and chill for half an hour.
Press pieces of the dough into molds to shape them into bear paws or other shapes.
Place the filled molds onto a baking sheet, pairing similar sizes together for even baking.
Bake in a preheated oven at 350°F (180°C) for about 10 minutes, depending on the size of the forms.
Let the cookies cool for about 15 minutes before popping them out of the molds.
Dip the cookies in a mix of powdered sugar and vanilla sugar.
