2 cups (250g) bread flour
2 ⅓ cups (250g) pastry flour
5 tbsp (75g) granulated sugar

Start making the dough a day ahead.

Mix milk, one part of the sugar and yeast until dissolved.

In a mixer add flours, salt, sugar and mix. The salt should not get into direct contact with the yeast. Add milk & yeast, eggs and knead on low speed for about 2 minutes, until the dough comes together.

Add the butter one tablespoon at a time. Wait until one lump is mostly mixed in before adding the next. Form a ball, put it in a bowl greased with sunflower oil and place it in a warm place, letting the dough rise for one hour.

After one hour, punch the air out of the dough and refrigerate it overnight, to slow its rise and make it easier to shape.

For the pastry cream mix eggs, sugar and cornstarch.

Bring to a boil heavy cream and milk. Pour over the egg mix stirring constantly. Place the saucepan over medium heat and cook the cream, whisking constantly, until thickened. Boil for about a minute. Add the chocolate and mix. Transfer the pastry cream to a bowl and let it cool for 5-10 minutes. Transfer it to a pastry bag and fill half-spheres. Freeze.

The next day, take the dough out of the fridge, punch the air out and divide it into 12-16 even pieces (mine had 80g). Place a chocolate half sphere in the middle and roll into balls.

If your dough is too soft, refrigerate for 10 minutes and roll the buns again. Cover loosely with plastic wrap and let them rise for 90 minutes in a warm place.

Preheat the oven to 190°C (374 °F).

Brush the buns with egg wash twice. Bake for 15 mins or until golden.
