1

In a bowl, combine 80 g of lukewarm milk, 5 teaspoons of sugar, and 2 teaspoons of dried yeast. Mix together and let sit for 10 minutes for the yeast to activate.

2

In a separate bowl, add 350 g of strong bread flour and 1 teaspoon of salt. Mix well.

3

Add the yeast mixture and 3 beaten eggs to the flour mixture. Mix until a smooth dough forms, which will be quite sticky.

4

Transfer the dough to a surface and knead for about 5 minutes using a slap and roll technique, turning the dough a quarter turn each time.

5

After 5 minutes, the dough will still be sticky but less so. Spread it out and add 100 g of softened butter. Knead the butter into the dough for about 10 minutes until the stickiness decreases.

6

Place the dough in a lightly greased bowl, cover it, and let it rise at room temperature until it doubles in size, about 2 hours.

7

Once risen, turn the dough out onto a surface and knock it back to remove gas. Cut the dough into 8 pieces.

8

Take a piece of dough, stretch it, and fold it into the center, working around the edge to form a ball shape. Roll it on the surface to seal the bottom and create a smooth shape.

9

Place the shaped dough balls on a lightly greased baking tray. Press them down gently and cover the tray with a large plastic bag. Let them rise at room temperature for about 45 minutes to 1 hour.

10

Preheat the oven to 175°C for a fan oven (195°C for a normal oven). Bake the rolls for about 15 minutes until golden brown.

11

Remove the rolls from the oven and place them on a rack to cool. If using as burger buns, brush the tops with a beaten egg and sprinkle sesame seeds before baking.
