Heat 150 grams of ghee in a clay pot.

Add 1 cup of sliced onions and sauté until translucent, do not brown them.

Prepare a paste with ginger, garlic, green chilies, and papaya, then add it to the onions and roast.

Add 500 grams of mutton to the pot and cook until the color changes, keeping the flame on medium-low.

Add salt to taste, 1 tablespoon of red chili powder, and 1/3 teaspoon of turmeric powder, and mix well.

Cook the mixture until the oil separates, then add 100 grams of yogurt and mix it in.

Cover the pot and let it cook for 10 minutes on medium-low heat.

Prepare the spice mix by grinding together 1 tablespoon of coriander powder, 1 tablespoon of black pepper, 1 teaspoon of shah jeera, 4 green cardamom, and 4 cloves.

After 10 minutes, remove the lid and check the mutton; if it’s tender, add more water if needed, about half a cup.

Check the spice level and add more salt if necessary.

Mix 1 tablespoon of fine flour with some water and add it to the pot to thicken the sauce.

Add the prepared spice mix to the pot and stir well to combine.

Wait for the mixture to boil, then cover and let it simmer for 15 minutes.
