Chop 2 Idaho potatoes and set aside.

Use Palermo peppers instead of regular sweet peppers.

Chop 1 red onion and set aside.

Add a handful of cilantro and some coriander.

Add 4 cloves of garlic to the mix.

Pre-cook the beans and corn in separate pots by boiling them.

Heat avocado oil in a pan over medium-high temperature.

Add the chopped onions and sauté for 2 minutes.

Add garlic and then the potatoes, sauté for 5 minutes until brown.
