It's a staple of Spanish cuisine, especially during hot summer months, providing a nutritious and hydrating meal. Over time, variations have emerged, with some incorporating fruits like watermelon or peach, making it a versatile dish enjoyed worldwide.

Remove the skin from the tomatoes by scoring the top and blanching in boiling water for 10 seconds.
Transfer the blanched tomatoes to ice water to cool, then remove the skins.
Dice the tomatoes into small pieces.
Slice the green bell pepper in half, remove the seeds, and finely dice it, keeping some for garnish.
Peel the cucumber, slice it, and keep the seeds in for texture, also keeping some for garnish.
Chop the garlic cloves finely.
Chop a good bunch of fresh basil, keeping some for garnish.
Dice the stale crusty bread.
Mix the diced vegetables with salt, black pepper, red wine vinegar, and extra virgin olive oil.
Marinate the mixture in the fridge for at least 2 hours, preferably overnight.
Blend the marinated mixture with a stick blender, adding cold water as needed.
Serve the soup chilled, adding ice if desired.
