Soak 1 cup of raisins in Pisco or rum.
Heat 2 tablespoons of olive oil in a skillet.
Add 1 lb and 1/4 of ground beef and 2 cups of onion to the skillet.
Stir in 2 teaspoons of paprika, 1 teaspoon of salt, and 1 teaspoon of sugar.
Add 1 teaspoon of Mexican chili powder and mix well.
Let the mixture simmer on low heat for 40 minutes to an hour until the raisins are plump.
In a mixing bowl, combine 4 cups of flour, 1 teaspoon of salt, and 1 teaspoon of sugar.
Cut in 1 stick of butter into the flour mixture until crumbly.
Gradually add 1 cup of water and mix until a dough forms.
Divide the dough into small balls.
Roll each ball into a large circle.
Fill the center with the beef mixture and add black olives.
Moisten the edges of the dough and fold over to seal, eliminating air bubbles.
Crimp the edges to secure the filling inside.
Prepare an egg wash with 2 egg yolks and a little cream, and brush it over the empanadas.
Preheat the oven to 400°F (or 350°F if preferred).
Bake the empanadas for 25 to 30 minutes until golden brown.
