Oil the sides and bottom of a baking dish with avocado oil.

Unfold two sheets of phyllo dough and layer them in the baking dish.

Spread shredded pumpkin over the phyllo dough.

Sprinkle walnuts over the pumpkin.

Add cinnamon and monk fruit sweetener over the mixture.

Drizzle with more avocado oil.

Roll the phyllo dough tightly around the filling to form a log.

Repeat the process with another two sheets of phyllo and the remaining filling.

Place the rolled tikvenik in the baking dish.

Bake in the preheated oven until golden brown.
