Clean the pumpkin and remove the skin.
Cut the pumpkin into cubes.
Finely chop half an onion.
In a skillet, heat extra virgin olive oil and add the chopped onion; sauté until the onion starts to sizzle.
After a couple of minutes, add the cubed pumpkin and mix; season lightly with salt.
Continue cooking for 5 minutes, stirring occasionally.
Season ground pork with salt and black pepper before adding it to the skillet.
Mix well and cook until the pork changes color, breaking it apart as much as possible.
Once the pork is fully cooked, push it to one side of the skillet and add the rice; toast the rice for a couple of minutes without dirtying another pan.
After a couple of minutes, mix everything together.
Deglaze the pan with half a glass of white wine and mix until the alcohol evaporates.
Gradually add hot water to the rice, allowing it to absorb slowly until the rice is halfway cooked.
Once halfway cooked, turn off the heat and add a bit of gorgonzola cheese, melting cheese cubes, and sprigs of rosemary; mix until all the cheese is melted.
Check the rice for seasoning and add more salt if needed; grate some parmesan cheese into the mixture and mix well.
Layer the rice mixture in a baking dish, starting with a layer of rice, then adding cheese, and topping with another layer of rice, leveling it out.
Grate more parmesan cheese on top and bake in a preheated oven at 200°C for 10-15 minutes until the surface is perfectly gratinated.
Use the oven to roast cleaned pumpkin seeds with a bit of salt for 5 minutes.
Remove from the oven and let it cool for a bit before serving.
