Saute onions in a pan.

Add 1/2 cup flour to the butter and onion mixture.

Stir the flour for about 2 minutes until well blended and browned.

Slowly pour in 1 quart of whole milk while stirring continuously.

Add 3/4 cup of Dijon mustard and a couple dashes of Tabasco to the mixture.

Keep stirring until the mixture thickens, which takes about 6 to 8 minutes.

Add shredded cheese (two kinds) and grated Parmesan cheese to the sauce.

Stir until the cheese is well melted into the sauce.

Add browned smoked turkey sausage to the cheese mixture and stir well.
