Greek yogurt provides creaminess with fewer calories.

Add 3 tablespoons of olive oil to a skillet.

Add chopped green bell pepper and sauté for about 1 minute.

Add peeled shrimp and season with salt and pepper; cook for about 20 seconds and toss.

Stir in 1/4 cup of chipotle sauce and corn; cook shrimp on low heat for about 1 minute.

Place a large tortilla on the grill and add cheddar cheese.

Add shrimp mixture on top of the cheese and more cheese if desired.

Grill the quesadilla for about 2 minutes on medium low heat.

Add cilantro or any green herb of choice.

Close the tortilla and check after a minute to ensure cheese is melted.

Remove from heat and cut into four pieces.
