In a medium-sized bowl, mix together 2 cups of rolled oats, 1/2 teaspoon salt, 1.5 teaspoons baking powder, and 2 teaspoons apple pie spice or cinnamon.
In a large bowl, whisk together 2 large eggs, 2 cups of unsweetened almond milk, 3.9 oz of no sugar added applesauce, 1/3 cup of Lantto maple flavored syrup, and 2 teaspoons of vanilla extract until fully incorporated.
Add the dry ingredients to the wet ingredients and stir until combined.
Peel and chop 2 medium-sized apples into small pieces, then fold them into the oatmeal mixture.
Spray a 9x9 inch casserole dish with cooking spray, then pour the oatmeal mixture into the dish and smooth it out.
Sprinkle 1/3 cup of chopped pecans on top of the mixture.
Preheat the oven to 375°F (190°C).
Bake the oatmeal for about 40-45 minutes, until the center is set and the edges are slightly browned.
Let it cool for a few minutes before cutting into a serving size, which is one-sixth of the total.
Optionally, top with aerosol whipped cream before serving.
