Preheat the oven to 200 degrees Celsius.
Slice the Brussels sprouts in half to create a bigger surface area for caramelization.
Toss the halved Brussels sprouts with salt, pepper, and olive oil, ensuring the cut side is facing up for optimal caramelization.
Place the Brussels sprouts on a baking sheet and roast in the oven for about 20 minutes, checking occasionally until they caramelize.
While the Brussels sprouts are roasting, prepare the hummus by reducing some ingredients in a saucepan.
In a blender, add tahini, a squeezed lemon (catching the seeds), garlic cloves, and the reduced ingredients from the saucepan.
Blend the mixture until smooth.
Once the Brussels sprouts are roasted, toss them with roasted chickpeas, a bit of lemon juice, maple syrup, and chili flakes.
Finish the dish by sprinkling za'atar over the top for added flavor.
