Instructions

  1. 1Harvest cocoa beans from cacao pods.
  2. 2Ferment cocoa beans for several days to develop flavor.
  3. 3Dry the fermented beans in the sun.
  4. 4Roast the dried beans until fragrant, about 20-30 minutes at 350°F.
  5. 5Crack open the roasted beans to remove the shells, leaving cocoa nibs.
  6. 6Grind the cocoa nibs into a paste, known as chocolate liquor.
  7. 7Separate the cocoa solids from cocoa butter by pressing the paste.
  8. 8Mix cocoa solids with sugar and cocoa butter to create chocolate.
  9. 9Add milk (for milk chocolate) and vanilla for flavor.
  10. 10Mold the chocolate mixture into desired shapes.
  11. 11Cool the chocolate until set, about 1-2 hours at room temperature.
  12. 12Wrap and store chocolate in a cool, dry place.
