Slice 1 pound of brussels sprouts in half and place them in a large bowl.

Add a little bit of avocado oil and a little bit of water to the bowl.

Sprinkle with salt and pepper, then gently toss to combine.

Lay the brussels sprouts flat side down on a sheet pan.

Cover the sheet pan tightly with foil to allow steaming.

Preheat the oven to 500°F (260°C) and place the sheet pan in the middle to upper position.

Roast for 10 minutes covered with foil, then remove the foil and roast for another 10-12 minutes.

After roasting, transfer the brussels sprouts to a large bowl.

Add 3 slices of cooked bacon and about a teaspoon of bacon fat to the bowl and toss together.
