Start with fresh Brussels sprouts, trimming off any woody ends and cutting each one in half.
Transfer the halved Brussels sprouts to a mixing bowl, including any leaves that may come off during cutting.
Take a head of garlic, smash it, and pull out the cloves, trimming off the ends to peel them.
Leave the garlic cloves whole or cut them into bite-sized pieces to prevent burning during cooking.
Add the garlic to the mixing bowl with the Brussels sprouts.
Drizzle 1/4 cup of melted butter over the Brussels sprouts, melted in the microwave.
Add 2 tablespoons of olive oil to the bowl for added flavor and to help crisp the leaves.
Season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper, adjusting to taste after roasting.
Toss the Brussels sprouts to coat them evenly with the butter, olive oil, garlic, and seasonings.
Spread the Brussels sprouts in an even layer on an ungreased baking sheet.
Bake in a preheated oven at 475°F for 20 to 25 minutes, depending on the size of the Brussels sprouts.
During the last 5 minutes of baking, sprinkle 1/4 cup of parmesan cheese over the Brussels sprouts.
Continue baking for an additional 5 minutes until the cheese is melted and crispy.
