Preheat the oven to 170°C (340°F).
Prepare a chiffon cake pan by greasing it lightly.
Separate the egg yolks and whites into two bowls.
Mix the egg yolks with sugar until creamy and pale.
Add vegetable oil and coconut milk to the yolk mixture; mix well.
Sift in the cake flour, baking powder, and salt; combine until smooth.
In a separate bowl, whip the egg whites with cream of tartar until stiff peaks form.
Gently fold the egg whites into the yolk mixture in three additions.
Fold in the durian flesh until evenly distributed.
Pour the batter into the prepared pan and smooth the top.
Bake for 40-45 minutes or until a toothpick comes out clean.
Remove from the oven and invert the cake to cool completely in the pan.
Once cool, gently remove the cake from the pan and serve.
