Granola

3/4 cup butter
2 tablespoons water
1 tablespoon vanilla
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup packed brown sugar
2 cups old-fashioned oats
2 cups quick oats

Melt 3/4 cup of butter in a bowl.

Add 2 tablespoons of water to the melted butter.

Stir in 1 tablespoon of vanilla extract.

Add 1 1/2 teaspoons of cinnamon and 1/4 teaspoon of nutmeg to the mixture.

Mix in 1/2 cup of packed brown sugar and stir until combined.

Add 2 cups of old-fashioned oats and 2 cups of quick oats to the bowl and mix until the oats are coated with the mixture.

Line a 9 by 13 pan with parchment paper.

Dump the oat mixture onto the parchment-lined pan and pat it down compactly and firmly with a spatula.

Do not stir the mixture after patting it down.

Bake the granola at 250°F for 1 hour.

Remove the granola from the oven and let it cool completely in the pan.

Once cooled, lift the granola out of the pan and break it into chunks as desired.

Store the granola in a sealed jar.
