BLT Sandwich

1 tomato, sliced thick (about 1/4 inch)

Sprinkle salt and pepper on both sides of the tomato slices and let sit for 10 minutes to draw out moisture.

Preheat the oven to 400°F and lay bacon on a parchment-lined baking sheet. Bake for 12-15 minutes until crispy.

Remove bacon from the oven and save the rendered fat in a jar.

Heat a skillet over medium heat and add a tablespoon of the reserved bacon fat.

Toast the mini sandwich bread slices in the skillet for a couple of minutes per side until golden brown.

Spread mayonnaise on the inside of each slice of toasted bread.

Layer crisp iceberg lettuce on the bottom slice of bread, followed by the seasoned tomato slices.

Break bacon strips in half and arrange them in a checkerboard pattern over the tomatoes.

Top with the other slice of bread, mayo-side down, and press gently. Slice diagonally to serve.
