Ultimate BLT | Best Bacon, Lettuce, Tomato and Avocado Sandwich

Prepare thick cut pork bacon by coating it generously with coarse ground black pepper on both sides. Let it rest in the refrigerator for 30-40 minutes.

Heat a 12-inch Stargazer skillet over medium heat and fry the bacon until cooked but not too crispy, turning once. Set the cooked bacon on a wire rack or paper towel to cool.

Slice beefsteak tomatoes thinly, about the thickness of a coin, and arrange them on a plate. Sprinkle brown sugar, salt, and pepper on the slices and let them rest to soak in the flavors.

Slice the avocado just before assembling the sandwich to prevent browning.

Toast sourdough bread in the preheated Stargazer skillet with Kerrygold butter until golden brown on both sides.

Mix together the special sauce using Duke's mayo, chili powder, smoked paprika, and Worcestershire sauce in a bowl.

Assemble the sandwich by spreading the special sauce on the toasted sourdough bread, layering with bacon, seasoned tomatoes, avocado slices, and more lettuce if desired.
