Preheat oven to 400°F (204°C).

Pierce the bottom of the store-bought deep dish pie crust with a fork.

Place a sheet of parchment paper over the crust and add baking beans or a mixture of brown rice and black beans on top.

Blind bake the crust in the oven for 10 minutes.

Slice mushrooms small and quarter the smaller ones.

Dice the small yellow onion.

Roughly chop 4 oz of bacon.

In a skillet, heat a little olive oil and add the mushrooms, onion, and bacon together.

Cook the mixture over medium-high heat for about 10 minutes until it develops some color on the edges.

Let the cooked mixture cool and set aside.

In a mixing bowl, whisk together 6 eggs, 2/3 cup heavy cream, and plenty of salt and pepper.

Add the cooled mixture of vegetables and cheese (pepper jack) to the egg mixture and mix well.

Remove the pie crust from the oven, lift out the beans and parchment paper, and let it cool on a plate.
