In a bowl, combine all-purpose flour and salt, then mix.
Add cold cubed butter into the flour and rub it in until it resembles coarse bread crumbs.
Add buttermilk to bring the dough together, adjusting with more if needed.
Knead the dough briefly on the countertop to form a smooth disc.
Chill the dough in the fridge for around 30 minutes.
Roll out the chilled dough on a floured surface to a 10-inch round.
Transfer the rolled pastry to a 9-inch deep dish by rolling it over a rolling pin.
Trim the edges of the pastry and crimp them as desired.
Brush the edges of the crust with egg wash for a golden finish.
Dock the pie crust with a fork to prevent bubbling during baking.
Line the crust with parchment paper and fill with baking beans (or old rice) to weigh it down.
Blind bake the crust in a preheated oven at 350°F (180°C) for 20 minutes.
Remove the beans and parchment, then bake for an additional 5 minutes until the crust is not wet.
In a large bowl, crack in eggs and add full fat milk and heavy cream, then season with salt and black pepper.
Whisk the custard mixture until combined.
Prepare the mix-ins: add 1 cup of sausage and bacon, 1 cup of Emmental cheese, and a mix of peppers, spinach, and mushrooms into the custard.
Add chopped parsley for extra flavor and whisk everything together.
