Mutton Shuwaa

Mutton leg 1 (around 1.5 kg)
Pepper Corns 1 tbsp
Coriander seeds 1 tbsp
Cumin 1 tbsp
Cardamom 8-10
Cloves 10-12
Cinnamon 1 piece
Nutmeg 1/2
10-12 garlic cloves
1 tbsp of salt
2 tbsp vegetable oil
2 tbsp vinegar
juice of 2 limes
1 tbsp of chilli flakes
Rice 3 cups (around 500 g)
Water 5 and 1/2 cups
Ghee 2 tbsp
1 tsp cumin
1/2 tsp pepper corns
whole garam masala (cardamom, cloves, cinnamon, star anise)
Saffron a pinch
Salt to taste

Dry roast pepper corns, coriander seeds, cumin, cardamom, cloves, cinnamon, and nutmeg, cool and grind to fine powder.

Add garlic cloves, salt, vegetable oil, vinegar, and lime juice to the powder and grind to a fine paste.

Add chilli flakes to the paste and mix well.

Make slits in the mutton leg and apply the prepared marinade.

Wrap the marinated mutton leg with banana leaves and then with aluminum foil.

Refrigerate for 4-5 hours.

Preheat the oven to 160°C and place the packed mutton leg inside.

Slow cook the mutton leg for about 5 hours.

Wash and soak rice for 30 minutes.

Heat ghee in a vessel, add cumin, pepper corns, and whole garam masala, and fry for a minute.

Add soaked and drained rice along with a pinch of saffron and fry for a minute.

Add water and salt, bring to a boil, then cover and cook on low flame for 30 minutes.
