- 6Grate nutmeg and add to the cooled spice mixture.
- 7Crush bay leaves and add to the spice blend.
- 8Transfer the toasted spices to a spice grinder or mortar and pestle.

- 4Add mixed vegetables to the pan and stir well to coat with the spices.
- 5Cover and cook for about 10 minutes, stirring occasionally, until the vegetables are tender.
- 6If using, add yogurt and mix well. Cook for another 2-3 minutes.
- 7Add garam masala and salt, stirring to combine.
- 8Remove from heat and drizzle with lemon juice.
- 9Garnish with fresh coriander before serving.
- 10Serve hot with rice or flatbreads.
