Add 2 packets of rapid rise yeast to 1/2 cup of warm water and whisk until dissolved.
Stir in 1/2 cup of raw cane sugar into the yeast mixture until dissolved.
Pour in 2 cups of milk and 1/2 cup of melted butter into the yeast mixture and stir.
Beat 1 egg with 1 teaspoon of salt and incorporate it into the mixture.
Add about 2 cups of flour to the mixture and stir until a soft dough forms.
Cover the dough and let it rise for about 1 hour until bubbly and doubled in size.
Chop orange peel, almonds, and currants, and mix in 1/4 teaspoon of nutmeg and ginger, and the zest of 1 lemon.
Add the chopped ingredients to the risen dough and mix well.
Gradually add more flour until the dough is kneadable, totaling about 6 cups.
Knead the dough on a floured surface until it holds its shape and is soft and pliable.
Oil a bowl and place the kneaded dough inside, turning it to coat with oil.
Cover the dough with a damp tea towel and let it rise for about 2 hours until fluffy and doubled in size.
