Erythritol is a low-calorie sweetener, while granulated sugar is more budget-friendly.

1

Start by measuring 220 grams of plain flour into a mixing bowl.

2

Soften 120 grams of butter at room temperature and add it to the flour.

3

Add 1 tablespoon of icing sugar to the mixture.

4

Pour in 75 milliliters of double cream and add a tiny bit of salt.

5

Add 2 egg yolks to the mixture and mix all ingredients together until a smooth dough forms.

6

Let the dough rest in the fridge for at least half an hour.

7

Prepare the walnut filling by measuring 100 grams of finely chopped walnuts.

8

Use a food processor to chop the walnuts finely.

9

Gradually add about 50 to 60 grams of icing sugar to the walnuts.

10

Add a few drops of vanilla extract and mix in 1 egg white.

11

Continue adding sugar until the walnut filling seems thick enough.

12

Once the dough has rested, place it onto a lightly floured surface.

13

Divide the dough into six equal parts.

14

Roll each piece of dough into a round shape about 3 millimeters thick.

15

Cut the circle into quarters.

16

Put a small amount of the walnut filling into each quarter, not too close to the center.

17

Brush the edges of each quarter with egg white.

18

Fold the dough over the filling towards the center of the circle and press the edges gently with your fingers.

19

Roll the dough over once more to close all gaps and form a crescent shape, tucking the ends in to make it even.

20

Transfer the crescents onto a baking tray greased with butter or lined with parchment paper.

21

Beat 1 egg gently with a fork and brush the surface of each crescent with the egg wash.

22

Preheat the oven to 180 degrees Celsius.

23

Bake the crescents for about 15 minutes or until they turn golden brown.

24

Let them cool off and transfer them onto a plate.

25

Sprinkle the walnut crescents with icing sugar before serving.
