It represents a blend of resourcefulness and comfort food, often enjoyed in diners across the country. Slice the spam into two slices per serving and chop it into smaller cubes.
Heat olive oil in a frying pan.
Chop the green onions, saving some for topping later.
Once the pan is hot, fry the spam until it gets a little crispy on the edges.
Add most of the chopped green onions to the pan, reserving some for topping.
Crack four eggs into a bowl and add a little milk to make them fluffy.
Scramble the eggs and add a little garlic salt.
Pour the scrambled eggs into the pan with the spam and onions.
Add feta cheese to the eggs, noting that it doesn't melt but adds great flavor.
Season with black pepper.
Slice the avocado using an avocado slicer and top the dish with it.
Sprinkle a little more feta cheese on top for presentation.
Garnish with the reserved green onions and add homemade salsa on top.
