2 roma tomatoes chopped
2 stalks of celery chopped
2 medium sized carrots grated
1/2 cup white wine
5 ounces soft cheese or queso
1 cup almond milk
2 tablespoons olive oil
chopped cilantro to garnish
1 teaspoon garlic powder
salt to taste

2 bay leaves
1/2 pound tilapia fish

Heat the pot with 2 tablespoons of olive oil.

Add chili and 2 bay leaves along with all the chopped veggies (red bell pepper, yellow bell pepper, onion, celery, grated carrots).

Cook for 8 to 10 minutes until the veggies are soft.

Add 1 teaspoon of garlic powder and mix it together.

After 8 to 10 minutes, add the 1/2 pound tilapia fillet on top of the veggies and close the lid; let it cook for 5 minutes.

Take out the tilapia fillet and cut it into pieces.

Add 1/2 cup white wine and 1 cup almond milk; mix it well.

Add 2 tablespoons of tomato paste and fresh tomatoes; cook for 2 minutes.

If all the ingredients are not immersed in the pot, add 1 cup of boiling water.

Add the fish pieces back into the pot.

Finally, add chopped cilantro and grated cheese; mix it together.

Turn off the heat and season with salt and pepper.
