Peel and cut green plantains into large pieces.
Boil plantains in water with 1 teaspoon of salt for about 15 minutes.
Chop 1 spring onion, 1/2 red onion, and 4 cloves of garlic.
Beat 2 eggs in a bowl.
Shred almost 1 pound of cheese (preferably a melting cheese).
Chop cilantro for garnish.
After 20 minutes, mash the boiled plantains until smooth, adding 3 teaspoons of margarine to help.
Heat a wok with oil and sauté the chopped vegetables with salt and pepper for around 2 minutes.
Add the mashed plantains to the sautéed vegetables and mix well.
Add 2 teaspoons of butter and mix until combined.
Add the shredded cheese and mix until melted, about 2 minutes.
Pour in the beaten eggs and mix carefully until cooked, about 2-3 minutes.
Stir in chopped cilantro before serving.
