Made primarily from sweet potatoes and coconut, it reflects the island's agricultural heritage and the use of local ingredients. This dish is typically served with a variety of meats or enjoyed on its own, showcasing the Caribbean's rich culinary tapestry. Today, ducana has found its way into the homes of many across the Caribbean and beyond, celebrated for its unique flavor and texture.

Prepare the banana leaves by cleaning them and pouring hot water over them to soften.
In a bowl, combine grated sweet potato, flour, grated coconut, sugar, grated carrots, ginger, vanilla essence, cinnamon, nutmeg, and water.
Mix the ingredients until well combined, achieving a good consistency.
Take a generous amount of the mixture and place it on a banana leaf.
Wrap the banana leaf over the mixture, folding it securely.
Tie the wrapped mixture with string to secure it well.
In a pan, add about 1.5 cups of water and place the wrapped ducana in the pan, ensuring not to add too much water to avoid drowning the parcels.
Cover the pan and steam the ducana for about 25-30 minutes.
After 30 minutes, check the ducana; it should be nicely steamed and cooked through.
Let the ducana cool off a bit before serving.
