Soak Goji berries in water.

Prepare mushrooms by cutting off the bottom and tearing them into individual pieces.

Cut ginger into large slices.

Wash 3 cups of medium grain jasmine rice.

Place chicken skin-side down in a cold pan and turn the heat to medium-low.

Let the chicken cook slowly to render the chicken fat from the skin, about 5 minutes.

Flip the chicken when the skin is brown and releases easily from the pan, cooking the other side for about 2 minutes.

In the same pan, add some oil and half the amount of sesame oil, then add ginger slices and fry until they curl up.

Remove the ginger and add mushrooms to the pan, frying for about 2 minutes until softened.

Transfer the mushrooms to the rice cooker with the chicken and rice.

Measure water using the same cup as the rice, at a ratio of 1:1.1 (3 cups rice to 3 and 1/3 cups water).

Turn on the rice cooker and cook the rice in its normal setting.

Once cooked, drain the Goji berries and add them to the pot along with the rest of the sesame oil, mixing gently.

Taste and adjust for seasoning, adding more salt if needed.
