Hot Sauce

Cultural Context

Originating from Tajikistan, hot sauce is a staple in Central Asian cuisine, often used to enhance the flavor of various dishes. It reflects the region's love for bold and spicy flavors, commonly accompanying meats and bread. Today, variations of hot sauce can be found worldwide, each with unique ingredients and heat levels.

pepper plants
salt
4 cloves garlic
1/4 cup white wine vinegar
1

Buy a portable planter and place it in your house, like in the guest bathtub.

2

Grow pepper plants from seeds, focusing on unique varietals like Habaneros and lipstick peppers.

3

After about four months of weeding and watering, harvest the peppers when they are ready.

4

Cut the stems off the harvested peppers and place them in a blender.

5

Blend the peppers until they are quasi liquefied to create a pepper mash.

6

Add around 1 tablespoon of salt for every 3 lbs of peppers to the mash.

7

Pour the mash into a fermentation jar and label it with a Sharpie.

8

Every day, burp the jars to release gas during the fermentation process for about 3 weeks.

9

After 3 weeks, check for mold in the jars and mash. If there's no mold, proceed to the next step.

10

Cut up 4 cloves of garlic and add them to the mash along with 1/4 cup of white wine vinegar.

11

Blend the mixture again until it reaches a smooth consistency.

12

Taste test the hot sauce with your finger to check the flavor.

13

Use a funnel to bottle the hot sauce for gifting.
