Wash the cucumbers thoroughly before cutting them up into slices.
Slice cucumbers to your preferred thickness, avoiding slices that are too thin.
Add the cucumber slices to a strainer and sprinkle with about 1/4 cup of salt, tossing to distribute evenly.
Let the salted cucumbers sit for about 30 minutes in the kitchen sink or over a bowl to draw out moisture.
Rinse the cucumber slices under cold water for a few minutes to wash away all the salt.
Rinse off any dirt from the carrots and peel if desired; chop them into thicker slices.
Cut the red onions in half, remove any damaged areas, and slice them into long strips.
In a medium-sized pot, combine 1 cup of vinegar, 2 cups of sugar, and 3 cups of water for the pickle juice, adjusting for the number of jars used.
Stir the mixture until the sugar is dissolved and bring it to a boil.
Prepare herbs and spices for the jars, washing dill and chopping a chili if desired.
Peel the garlic by smashing the clove with a knife to loosen the shell.
Add garlic to the bottom of each jar, followed by chili (if using), mustard seeds, and pink peppercorns.
Layer the vegetables in the jars, pressing down to remove air pockets, and add more herbs and spices between layers.
Pour the boiling pickle juice directly into the jars, ensuring the jars are warm to prevent cracking.
Let the jars cool on the counter for a few hours before refrigerating them.
Wait for at least one day before consuming the pickles.
