Nutritional yeast adds a cheesy flavor with fewer calories.

With a mandolin or knife, slice zucchini as thin as you would like.

Line them on a paper towel and sprinkle with salt.

Let them sit for 10 minutes so that the salt brings the water out of them.

If you don’t love salt, rinse all of your zucchini chips. Otherwise, place them in a bowl and sprinkle with seasoning and oil, making sure to coat all of it.

On a parchment-lined baking sheet, arrange them in a row and bake at 250°F.

Check them after an hour and flip them.

Keep an eye on them within the next half hour to make sure that they are not burning.
