Thinly slice zucchini into rounds using a mandolin or knife.
Place zucchini rounds on a paper towel for about 10 minutes and sprinkle with salt to draw out moisture.
Pat down the zucchini with paper towels to absorb moisture.
Place zucchini rounds on a parchment-lined baking sheet.
Spray zucchini rounds with olive oil spray or brush with olive oil.
Sprinkle seasoning on the zucchini rounds (optional: add Parmesan cheese).
Preheat oven to 200 degrees Fahrenheit.
Place the baking sheet in the preheated oven and bake for about two hours.
Check zucchini chips after an hour and a half for crispiness and to ensure they aren't burning.
Remove zucchini chips from the oven once golden brown and place on the counter to cool.
Store leftover zucchini chips in an airtight container or zip bag in the fridge for three to four days.
