Mix 500g all-purpose flour, 5g salt, 12g white sugar, 5g baking powder, and 3g baking soda in a bowl.

In another bowl, mix 135ml water, 135ml milk, and 1 egg; then pour this mixture into the dry ingredients and mix well.

Microwave 42g unsalted butter for 20-30 seconds and add it to the dough; knead the dough.

Press on the dough and cover; let it rest for 15 minutes.

After 15 minutes, press and fold the dough, then cover and rest for another 15 minutes.

Repeat the press and fold step again after the second resting period.

Cut the dough in half and shape each half into a log.

Wrap each piece of dough in plastic wrap and let it rest for 4-5 hours at room temperature.

After resting, unwrap a piece of dough, sprinkle flour on it, and flatten it with a rolling pin.

Cut the dough into about 1.5cm pieces.

Use a bamboo skewer dipped in water to make a line with water on the dough pieces.

Stack every second piece on top of a piece that has water and press off the ends; use the skewer to press a line in the center.

Heat 900-1000ml vegetable oil over medium heat; test the oil readiness with a wooden chopstick.

Stretch a piece of dough and carefully place it into the hot oil; flip using chopsticks and fry the rest of the pieces until crispy.
