Break the egg into a mixing bowl and whisk it.
Add 1 cup of milk and whisk together with the egg.
Add 1 teaspoon of vanilla extract, 1 tablespoon of granulated sugar, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt to the mixture and whisk until combined.
Pour in 2 tablespoons of vegetable oil and mix everything together.
Gradually add 1 cup of all-purpose flour to the wet ingredients and mix until well combined.
Let the batter sit for about 10 minutes to activate the baking powder and baking soda.
Heat a frying pan over medium heat.
Pour the batter into the frying pan and watch for bubbles to appear on the surface.
Once bubbles start popping, flip the pancake over and cook for about 30 seconds on the other side.
Remove the pancake and repeat the process with the remaining batter.
