Gradually add sugar while continuing to beat until stiff peaks form.
Fold the egg whites gently into the yolk mixture in three additions until no streaks remain.
Heat a non-stick skillet over low heat and grease lightly with butter.
Spoon the batter into the skillet, using a ring mold if desired for shape.
Cover the skillet and cook for about 4-5 minutes until the bottom is golden.
Flip the pancakes carefully and cook for another 4-5 minutes, covered, until puffed and set.
Remove from the skillet and serve immediately with syrup or toppings of choice.
