1

Prepare the ribs by removing the membrane from the back.

2

Mix guava paste, soy sauce, garlic, onion, lime juice, brown sugar, black pepper, cumin, oregano, and salt in a bowl to create the marinade.

3

Coat the ribs thoroughly with the marinade, cover, and refrigerate for at least 4 hours, preferably overnight.

4

Preheat the grill to medium heat.

5

Remove the ribs from the marinade and reserve the marinade for later use.

6

Sear the ribs on the grill for 3-4 minutes on each side until browned.

7

Transfer the ribs to a baking dish and add the reserved marinade and water.

8

Cover the dish with aluminum foil and braise in the oven at 300°F for 2-3 hours until tender.

9

Remove the foil and increase the oven temperature to 400°F for the last 30 minutes to caramelize the glaze.

10

Baste the ribs with the marinade every 10 minutes during the caramelization process.

11

Once done, let the ribs rest for 10 minutes before slicing.

12

Serve the ribs with lime wedges and your choice of sides.
