tuna

🥗Healthier: canned salmon

💰Cheaper: canned mackerel

Canned mackerel is often less expensive and has a similar flavor profile.

hard-boiled eggs

🥗Healthier: avocado

💰Cheaper: tofu

Tofu provides a protein alternative for those avoiding eggs.

1

Heat a pan with a little oil.

2

Season the salmon with Dukes seasoning and place it in the pan.

3

Cook the salmon until it has a nice crust, flipping it halfway through.

4

In a bowl, prepare the dressing by mixing Dijon mustard, brown sugar, and balsamic vinegar.

5

Add chopped red onion to the dressing mixture, followed by salt and black pepper.

6

Mix the dressing well, ensuring the sugar dissolves in the vinegar.

7

Add three-quarters of a cup of olive oil to the dressing and mix again until incorporated.

8

In a bowl, combine spring mix and chopped romaine lettuce.

9

Add 1.5 ladles of the dressing to the lettuce and mix with tongs.

10

Plate the lettuce mixture in a bowl as the base for the salad.

11

Place the cooked salmon on top of the lettuce.

12

Add blanched green beans around the plate, ensuring they still have a little crunch.

13

Slice hard-boiled eggs in half and place them on the side of the salad.

14

Add cherry tomatoes next to the eggs.

15

Garnish the salad with pickled onions and capers.
