Heat olive oil in a pan over medium heat.

Add the celery to the pan and cook for about 2 minutes.

Add minced garlic and cook for 1 minute.

Dice the potatoes and add them to the pan.

Cook for 2-3 minutes.

Chop the parsley and add it to the pan.

Season with salt and black pepper.

Pour in the vegetable broth and cook for 15 minutes.

Cut the whole wheat bread crusts into smaller pieces.

Add the bread crusts to the pan and fry for 3-5 minutes.

Transfer to a smaller pot or bowl and blend the soup.
