Dill adds a unique flavor, while dried parsley is often less expensive.

Wash and cut the potatoes in half.

In a bowl, combine lemon juice, vegetable or canola oil, olive oil, and dried oregano.

Toss to coat the potatoes in the mixture.

Place the potatoes in a deep flat pan and add 3 cups of water.

Bake uncovered at 425 degrees for 1 1/2 hours, stirring occasionally.

In the last 30 minutes, allow the water to evaporate until only oil is left, stirring more frequently to prevent browning.

Garnish with fresh parsley if desired.
