Line a roasting pan with parchment paper.

Place the potatoes in a single layer in the roasting pan.

Cover the potatoes with the lemony mixture.

Cover the roasting pan with aluminum foil and cook for 45 minutes.

Remove the foil and cook for an additional 20 to 25 minutes or until the potatoes are tender and absorb the lemony broth.
