Roasted Baby Potatoes

2 lbs baby potatoes
3 tbsp olive oil
1/2 tsp black pepper
1 tsp salt
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
1/2 tsp dried ground cumin
1 tsp granulated garlic powder
2 tbsp fresh lemon juice
2 scallions, chopped

Gather ingredients: baby potatoes, olive oil, black pepper, salt, dried oregano, crushed red pepper flakes, dried ground cumin, granulated garlic powder, fresh lemon juice, and scallions.

Cut the baby potatoes in half and transfer them to a roasting pan.

Drizzle olive oil over the potatoes (1/4 to 1/2 cup depending on preference).

Grind fresh black pepper on top of the potatoes.
