Apple cider vinegar has additional health benefits; white vinegar is cheaper.

Make the vinaigrette by combining 1/4 cup malt vinegar, 2 tablespoons olive oil, a big pinch of salt, 2 tablespoons sugar, and pepper in a bowl. Whisk it up.

Peel the cucumbers and chop off the ends.

Cut the cucumbers down the middle and remove the seeds if desired, then slice them into 1/2 inch cubes.

Chop up a squash (optional) into 1/2 inch cubes, similar in size to the cucumbers.

Cut 4 to 5 tomatoes into pieces, optionally removing the juice and seeds.

Chop 1/2 onion and add it to the salad ingredients.

Combine all the chopped ingredients in a large bowl and stir well to mix everything together.
